I think for most people (myself included) it is not so much the end cost of the flight, it is the business method used to initially deflate the seat cost & then when they have you on the hook all the “extras” (which aren’t really extras) start popping up. 
1 - Nobody, apart from people who have property & personal goods on the island is going to go on holiday with a “holdall” size bag, therefore they either have to book priority or pay extra for a case. 
2 - if you are travelling as a couple, do you really want to be sitting at opposite ends of the aircraft ? Therefore you need to book seats & again pay extra.
When you get done adding all these bits on, the prices aren’t so great TBH

The new small bag is big enough I'd easily manage short trips with just that.  It's 20litres with no weight limit.

Plenty of people would pay extra to sit apart.

One of the reasons why we often fly through GC or mainland - to have more options. But I understand, there's not much of competition up in Scotland.

Not just Scotland, with TC gone there's now very few options even from London Gatwick, which you might think would be a reasonably major southern hub. EasyJet more or less have a monopoly there.

Market forces will sort it all out in the end. Higher prices, more attractive, more airlines try to enter the market etc., lower passenger numbers is a worry for local economy though so would think they would be talking to airlines to address this. The danger is that the island sells itself short in trying to increase visitor numbers and adopts the business model of other destinations i.e all inclusive, the island has so much more to offer than that.

I think it's quite fair to add on extras to a low price. Ryanair make their charges clear, and it's up to you whether you follow their rules and pay for what you need. We have flown with Ryanair many times over the years to the UK and return and to Madrid and Barcelona and have always been very happy with the final price.
Very often it's cheaper to fly from Fuerteventura to the UK than it is to travel the 100 km from the nearest airport to my mother's house by train,once I get to the UK.
