Does Ireland not have an “essential travel” thing on just now for Spain ? Thought I heard/seen that. If so you will not likely get any policy to cover you against government advise ☹️

Same as the UK, essential travel only, but I wound still feel safer over there than spending a week in Ireland. I will self isolate I return but just need some sort of insurance for basic cover.

You can buy travel insurance, but if you go against government advice to travel (ie your journey is not 'essential travel') you automatically invalidate your insurance policy.
So, you would be paying good
Money for insurance that would not cover you!

The Ministry of Tourism, Industry and Commerce of the Canary Islands Government has signed an agreement with AXA Spain for the subscription of a travel assistance policy applicable to all tourists traveling to the Islands, whether foreign or national, and with the object of responding to incidents related to the COVID-19, among which is the need to extend quarantine stays.
The agreement was signed by the regional councilor Yaiza Castilla, on behalf of the public company Promotur Turismo de Islas Canarias of which she is CEO, and the company AXA Seguros, represented on the spot by the director of the Canary Islands, Auxiliadora Expósito, and Enrique Fernández, representing EM7 Risk Management and agent of AXA.
The Canary Islands thus becomes the first Spanish Autonomous Community in which tourists will have travel assistance coverage with guarantees of medical expenses, health repatriation and prolongation of stays by quarantine related to the COVID-19, to comply with a mandatory confinement as a result positive. All this, as long as it is not known prior to the trip, as set out in the conditions of the insurance policy.
With the subscription of this policy, in the words of Yaiza Castilla, the Canary Islands advance further in their commitment to strengthen and increase the safety and tranquility of tourists. In addition, Turismo de Canarias and AXA Spain coincide in pointing out that this travel assistance insurance constitutes one more attraction of the destination, which already stands out for its health security, before those people who are currently deciding where to spend their holidays.
As a result of this agreement, the AXA insurer will make available to the Canary Islands Government an exclusive telephone hotline to attend to any circumstance related to this policy.
The protection of tourists, Spaniards (including island ones) and foreigners through this insurance is effective from this week and will initially have a validity of 12 months, excluding the circumstances known before the start of the trip and under the conditions set by policy.
